Foody Friday

In a bid to save money, be healthier and eat a more varied menu each week, we decided to start getting an organic vegetable box delivered. So, last Friday we received our first box of Abel & Cole organic veg, and it was tasty! It's definitely saved us money, as there was no need to pop out to the supermarket for a couple of things, which always ends up with us buying a couple of bags worth and spending far too much. And we've enjoyed some really delicious meals this week. I always plan the menu for at least the week, though I did it for three weeks this month, and then I do an online shop for meat and long-lasting foods. Our dinners were starting to look a bit samey, so the injection of these scrummy vegetables - some of which I just wouldn't think to buy normally - has really livened up our meal times.

The Romanesco Cauliflower is stunning to look at. It's like some sort of sea creature. The hubby reliably tells me it is a brilliant example of a fractal. To read a beautiful description of this beautiful vegetable, check this article.
We enjoyed this roasted and it was gorgeous. A mellow, slightly nutty flavour, with none of the bitterness of normal cauliflower. If you want to try it, just toss it in a little olive oil and put in a hot oven for 20-30 minutes. I put ours in with the roast potatoes for Sunday lunch - part way through cooking and I turned the florets after about 15 minutes.

The Portobello mushrooms, I griddled and covered in garlic butter, and served them on top of cheesy red lentils. A great source of protein and B loved it.

I stir-fried the Kale in a little olive oil and butter with a sprinkling of freshly grated nutmeg, and we've enjoyed this a few times this week.

My favourite meal this week was fennel and mushrooms in a cream sauce with kale and tagliatelle. It was devoured at great speed by B too.
